Pretty much every time I go shopping I pick up a 3-pk of zucchini. I have really come to enjoy them in the past year and more so now as a vegan. They don’t have a distinctive taste or flavor which is great because it allows for zucchini to work with so many dishes.
Here are some of my zucchini dishes:
Most recently zucchini fries which were so easy to make. I fried them instead of baked them because I didn’t want to wait 18-19 minutes according the recipe I saved on my Pinterest page.
I used coconut oil to shallow fry them. The sauce is a soy ginger sauce.
Zucchini bread.
Pizza.
Spaghetti.
Stirfry.
There are so many things to try that zucchini will be a forever staple on my grocery list.
